Parmesan Espresso Martini Steak Recipe

Ingredients:

For the Steak:

  • 2 ribeye or sirloin steaks (about 1 inch thick, 12-16 oz each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh rosemary

For the Espresso Martini Sauce:

  • 1 shot (1 oz) freshly brewed espresso
  • 1/4 cup (60 ml) vodka
  • 1/4 cup (60 ml) coffee liqueur (e.g., Kahlúa)
  • 1/2 cup (120 ml) beef broth
  • 1 tablespoon brown sugar
  • 1 teaspoon balsamic vinegar
  • Salt and black pepper, to taste

For the Parmesan Topping:

  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon finely chopped fresh parsley

Instructions:

Prepare the Steaks:

  1. Take the steaks out of the refrigerator and let them sit at room temperature for 30 minutes before cooking. Season both sides generously with salt and black pepper.
  2. Preheat a cast-iron skillet or heavy-bottomed pan over high heat until very hot.

Cook the Steaks:

  1. Add the olive oil to the hot skillet. Once the oil is shimmering, add the steaks.
  2. Sear the steaks for about 3-4 minutes on each side for medium-rare, or adjust the cooking time according to your preferred doneness.
  3. During the last minute of cooking, add the butter, garlic, and rosemary to the skillet. Tilt the pan and spoon the melted butter over the steaks to baste them.
  4. Remove the steaks from the skillet and let them rest on a cutting board, tented with foil, for about 5 minutes.

Prepare the Espresso Martini Sauce:

  1. While the steaks are resting, carefully wipe out any burnt bits from the skillet, leaving the flavorful fond behind.
  2. Reduce the heat to medium and add the freshly brewed espresso, vodka, coffee liqueur, beef broth, and brown sugar to the skillet. Stir to combine.
  3. Let the sauce simmer for about 5-7 minutes, allowing it to reduce and thicken slightly.
  4. Stir in the balsamic vinegar and season with salt and black pepper to taste. Keep the sauce warm over low heat.

Prepare the Parmesan Topping:

  1. In a small bowl, mix the grated Parmesan cheese with the chopped parsley.

Serve the Steak:

  1. Slice the rested steaks against the grain and arrange them on serving plates.
  2. Drizzle the espresso martini sauce over the steaks.
  3. Sprinkle the Parmesan topping generously over the sauced steaks.
  4. Garnish with additional parsley if desired.

  • For a stronger espresso flavor, you can add an extra shot of espresso to the sauce.
