Cinnamon Apple Bread Recipe
Ingredients
For the Bread:
- 2 cups (250g) all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) buttermilk
- 2 cups (about 2 medium) peeled and finely chopped apples (use a variety like Granny Smith, Honeycrisp, or Fuji)
For the Cinnamon Sugar Swirl:
- 1/3 cup (65g) granulated sugar
- 1 teaspoon ground cinnamon
For the Topping:
- 2 tablespoons (30g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Prepare Cinnamon Sugar Swirl: In a small bowl, mix together 1/3 cup granulated sugar and 1 teaspoon ground cinnamon. Set aside.
- Prepare the Batter:
- In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the butter and 1 cup of granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix just until combined.
- Fold in the chopped apples.
- Layer the Batter:
- Spread half of the batter into the prepared loaf pan.
- Sprinkle half of the cinnamon sugar mixture evenly over the batter.
- Spread the remaining batter over the cinnamon sugar layer.
- Sprinkle the remaining cinnamon sugar mixture evenly over the top of the batter.
- Bake the Bread: Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If the bread starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
- Add the Topping:
- When the bread is done baking, remove it from the oven and let it cool in the pan for about 10 minutes.
- In a small bowl, mix together 2 tablespoons granulated sugar and 1/2 teaspoon ground cinnamon.
- Brush the top of the bread with the melted butter, then sprinkle the cinnamon sugar mixture evenly over the top.
- Cool and Serve: Let the bread cool completely on a wire rack before slicing and serving. This helps the flavors to meld and makes slicing easier.
