Honey Cake Recipe
Ingredients
For the Cake:
- 3 1/2 cups (440g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup (200g) granulated sugar
- 1 cup (240ml) vegetable oil
- 1 cup (340g) honey
- 1 cup (240ml) strong brewed coffee, cooled
- 1/2 cup (120ml) orange juice
- 1 teaspoon vanilla extract
- Zest of 1 orange (optional)
For the Glaze (optional):
- 1 cup (120g) powdered sugar
- 2-3 tablespoons milk or orange juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch (25cm) bundt pan or a 9×13-inch (23x33cm) baking pan.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
- Mix Wet Ingredients: In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy. Gradually add the vegetable oil, honey, coffee, orange juice, and vanilla extract. Mix until well combined.
- Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If using, fold in the orange zest.
- Pour Batter into Pan: Pour the batter into the prepared pan, spreading it evenly.
- Bake the Cake: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If using a 9×13-inch pan, check for doneness at around 35-40 minutes. If the cake starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
- Cool the Cake: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare the Glaze (optional): In a small bowl, whisk together the powdered sugar, milk or orange juice, and vanilla extract until smooth. Adjust the consistency by adding more milk or orange juice if needed.
- Glaze the Cake (optional): Once the cake is completely cooled, drizzle the glaze over the top. Let the glaze set for a few minutes before serving.
