Chocolate Zucchini Bread
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 cups grated zucchini (about 2 medium zucchinis)
- 3/4 cup semi-sweet chocolate chips (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
2. Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon. Set aside.
3. Prepare Wet Ingredients:
- In a large bowl, beat the eggs until light and frothy.
- Add the vegetable oil, granulated sugar, brown sugar, and vanilla extract, and mix until well combined.
4. Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in the grated zucchini, making sure it is evenly distributed throughout the batter.
- If using, gently fold in the chocolate chips and chopped nuts.

- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
6. Cool and Serve:
- Allow the bread to cool in the pan for about 10 minutes.
- Transfer it to a wire rack to cool completely before slicing and serving.
