Easy Chocolate Fudge Cake

Ingredients:

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Chocolate Fudge Frosting:

  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 cup whole milk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper for easy removal.

2. Make the Cake Batter:

  • In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  • Add the granulated sugar and whisk to combine.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
  • Gradually add the boiling water to the batter, mixing on low speed until smooth. The batter will be thin, but that’s okay.

3. Bake the Cakes:

  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.

4. Make the Chocolate Fudge Frosting:

  • In a large bowl, beat the softened butter until creamy and smooth.
  • Sift together the powdered sugar and cocoa powder to remove any lumps.
  • Gradually add the powdered sugar and cocoa mixture to the butter, beating on low speed until combined.
  • Add the milk, vanilla extract, and salt, and beat on medium-high speed until the frosting is light and fluffy. Add more milk if necessary to reach the desired consistency.

5. Assemble the Cake:

  • Place one cake layer on a serving plate or cake stand.
  • Spread a generous amount of chocolate fudge frosting over the top of the first layer.
  • Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  • For a smooth finish, dip an offset spatula in hot water, wipe it dry, and use it to smooth the frosting.

6. Serve:

  • Slice and serve the cake at room temperature.
  • Store any leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
