Chocolate Mousse

Ingredients:

For the Chocolate Mousse:

  • 7 oz (200g) semisweet or dark chocolate, chopped
  • 3 tablespoons unsalted butter, cubed
  • 3 large eggs, separated
  • 1/4 cup granulated sugar, divided
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

1. Melt the Chocolate:

  • Place the chopped chocolate and cubed butter in a heatproof bowl set over a pot of simmering water (double boiler method). Stir until melted and smooth.
  • Remove the bowl from the heat and let it cool slightly.

2. Prepare the Egg Yolks:

  • In a medium bowl, whisk the egg yolks with 2 tablespoons of granulated sugar until pale and thick.

3. Combine Chocolate and Egg Yolks:

  • Gradually whisk the melted chocolate mixture into the egg yolk mixture until well combined. Set aside to cool.

4. Beat the Egg Whites:

  • In a clean mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites until soft peaks form.
  • Gradually add the remaining 2 tablespoons of granulated sugar and continue beating until stiff peaks form.

5. Whip the Cream:

  • In another bowl, beat the heavy cream and vanilla extract until stiff peaks form.

6. Fold Ingredients Together:

  • Gently fold the whipped cream into the chocolate mixture until well combined.
  • Carefully fold the beaten egg whites into the chocolate mixture in three additions, making sure to retain as much air as possible for a light and airy mousse.

7. Chill the Mousse:

  • Spoon the mousse into individual serving dishes or glasses.
  • Cover and refrigerate for at least 2 hours, or until set.

8. Serve:

  • Optionally, garnish with whipped cream, chocolate shavings, or fresh berries before serving.
