This creamy and delicious Whipped Cream Strawberry Ice Cream combines fresh strawberries with rich whipped cream for a delightful treat. It’s easy to make and perfect for a refreshing dessert.

Ingredients

For the Strawberry Mixture:

  • 500 g (1 lb) fresh strawberries, hulled and chopped
  • 100 g (1/2 cup) granulated sugar
  • 1 tbsp lemon juice

For the Whipped Cream Base:

  • 480 ml (2 cups) heavy cream, cold
  • 200 ml (3/4 cup) sweetened condensed milk
  • 1 tsp vanilla extract

Optional:

  • Additional strawberries for garnish
  • Whipped cream for serving

Instructions

1. Prepare the Strawberry Mixture:

  • In a medium bowl, combine the chopped strawberries, granulated sugar, and lemon juice.
  • Mash the strawberries slightly with a fork or potato masher to release some of the juices, leaving some chunks for texture.
  • Let the mixture sit for about 15-20 minutes, allowing the flavors to meld and the strawberries to release their juices.

2. Make the Whipped Cream Base:

  • In a large bowl, beat the cold heavy cream with an electric mixer on medium-high speed until soft peaks form.
  • Add the sweetened condensed milk and vanilla extract to the whipped cream, and continue to whip until stiff peaks form. Be careful not to over-whip, as this can cause the mixture to become grainy.

3. Combine and Freeze:

  • Gently fold the strawberry mixture into the whipped cream base, being careful not to deflate the whipped cream too much. Mix until well combined.
  • Pour the mixture into a freezer-safe container, spreading it out evenly.
  • Cover the container with a lid or plastic wrap, ensuring it’s airtight.

4. Freeze the Ice Cream:

  • Place the container in the freezer and let it freeze for at least 4-6 hours, or until the ice cream is firm.

5. Serve:

  • Once the ice cream is fully set, scoop it into bowls or cones.
  • Garnish with additional fresh strawberries and a dollop of whipped cream if desired.

Tips:

  • For a smoother texture, you can blend the strawberries before mixing them with the whipped cream base.
  • You can also add mix-ins like chocolate chips, crushed cookies, or nuts for extra flavor and texture.

Enjoy your homemade Whipped Cream Strawberry Ice Cream, a perfect blend of creamy, fruity goodness!
