Strawberries and Cream Cupcakes

Ingredients

For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup fresh strawberries, hulled and finely chopped

For the Strawberry Filling:

  • 1 cup fresh strawberries, hulled and chopped
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

For the Whipped Cream Frosting:

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

For Garnish:

  • Fresh strawberries, hulled and sliced

Instructions

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Line a 12-cup muffin tin with cupcake liners.

2. Make the Cupcake Batter:

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the butter and sugar together until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the flour mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  • Gently fold in the chopped strawberries.

3. Bake the Cupcakes:

  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

4. Prepare the Strawberry Filling:

  • In a small saucepan, combine the chopped strawberries, granulated sugar, and lemon juice.
  • Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10 minutes.
  • Remove from heat and let cool completely.

5. Make the Whipped Cream Frosting:

  • In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.

6. Assemble the Cupcakes:

  • Once the cupcakes are completely cool, use a small knife or cupcake corer to remove a small portion from the center of each cupcake.
  • Fill each cupcake with the strawberry filling.
  • Pipe or spread the whipped cream frosting over the top of each cupcake.

7. Garnish and Serve:

  • Garnish each cupcake with a slice of fresh strawberry.
