Here’s a flavorful and easy recipe for Steak Fajitas with tender marinated steak, sautéed peppers, and onions, all wrapped up in warm tortillas!

Ingredients:

For the Marinade:

  • 1 lb flank steak or skirt steak
  • 3 tbsp olive oil
  • 2 tbsp lime juice (about 1 lime)
  • 2 tbsp orange juice
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp ground oregano
  • Salt and pepper, to taste

For the Fajitas:

  • 2 tbsp olive oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow or green bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 8-10 flour tortillas, warmed
  • Fresh cilantro, chopped (optional)
  • Lime wedges, for serving

Optional Toppings:

  • Sour cream
  • Salsa
  • Guacamole
  • Shredded cheese
  • Pico de gallo

Instructions:

1. Marinate the Steak:

  • In a bowl, whisk together the olive oil, lime juice, orange juice, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper.
  • Place the steak in a resealable bag or shallow dish and pour the marinade over it.
  • Marinate the steak in the fridge for at least 30 minutes, or up to 4 hours for more flavor.

2. Cook the Vegetables:

  • Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
  • Add the sliced bell peppers and onions, and sauté for 6-8 minutes until the vegetables are softened and slightly charred. Season with a pinch of salt and pepper.
  • Transfer the cooked vegetables to a plate and set aside.

3. Cook the Steak:

  • In the same skillet, add the remaining tablespoon of olive oil over medium-high heat.
  • Remove the steak from the marinade and shake off any excess liquid.
  • Cook the steak for 4-5 minutes per side for medium-rare, or adjust to your preferred doneness.
  • Once cooked, remove the steak from the pan and let it rest for 5-10 minutes.

4. Slice the Steak:

  • After resting, slice the steak thinly against the grain for tender pieces.

5. Assemble the Fajitas:

  • Warm the tortillas in a dry skillet or microwave.
  • Layer the steak slices on the tortillas, then top with the sautéed peppers and onions.
  • Add any of your favorite toppings like sour cream, guacamole, shredded cheese, or salsa.
  • Garnish with fresh cilantro and a squeeze of lime.

Notes:

  • For extra flavor, you can also grill the steak over high heat for a smoky char.
  • If you want spicier fajitas, add sliced jalapeños or a dash of hot sauce.
  • Serve the fajitas with rice and beans for a complete meal!
