Prep Time: 15 minutes

Cook Time: 25-30 minutes

Chill Time: 1 hour

Ingredients:

For the Cookie Base:

  • 2 cups (250g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the Sour Cream Filling:

  • 1 cup (240g) sour cream
  • ½ cup (100g) granulated sugar
  • 1 large egg
  • 1 tbsp all-purpose flour
  • 1 tsp vanilla extract

Optional Toppings:

  • ½ cup (80g) mini chocolate chips
  • ½ cup (60g) chopped nuts
  • ½ cup (80g) dried fruit (like raisins or cranberries)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.

2. Make the Cookie Base:

  1. In a medium bowl, whisk together the flour, baking soda, and salt.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually mix in the dry ingredients until a soft dough forms.
  5. Press ⅔ of the dough evenly into the bottom of the prepared baking pan, reserving the remaining ⅓ for the topping.

3. Prepare the Sour Cream Filling:

  1. In a medium bowl, whisk together the sour cream, sugar, egg, flour, and vanilla extract until smooth.

4. Assemble the Bars:

  1. Pour the sour cream filling over the cookie base and spread it evenly with a spatula.
  2. Crumble the remaining cookie dough over the top of the filling. Sprinkle with optional toppings like chocolate chips, nuts, or dried fruit if desired.

5. Bake the Bars:

  1. Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the filling is set.
  2. Remove from the oven and let cool completely in the pan.

6. Chill and Serve:

  1. Once cooled, transfer the bars to the refrigerator to chill for at least 1 hour.
  2. Lift the bars out of the pan using the parchment paper overhang. Slice into squares and serve.

Tips:

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can add a pinch of cinnamon to the dough for a warm flavor.
  • For a sweeter topping, drizzle with melted chocolate or a powdered sugar glaze before serving.
