Basque Cheesecake Recipe
Ingredients:
- 2 lbs (900g) cream cheese, at room temperature
- 1 1/2 cups (300g) granulated sugar
- 6 large eggs
- 2 cups (480ml) heavy cream
- 1 tsp vanilla extract
- 1/4 cup (30g) all-purpose flour
- 1/2 tsp salt
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a 10-inch (25cm) springform pan with parchment paper, making sure the parchment goes up the sides of the pan. This will give the cheesecake its rustic, wrinkled appearance.
- Prepare the Cream Cheese Mixture: In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- Add Sugar: Gradually add the granulated sugar, continuing to beat until fully incorporated and the mixture is smooth.
- Add Eggs: Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.
- Add Cream and Vanilla: Reduce the mixer speed to low and slowly pour in the heavy cream, followed by the vanilla extract. Mix until just combined.
- Add Flour and Salt: Sift the flour and salt over the mixture and fold in with a spatula until just combined. Be careful not to overmix.
- Pour into Pan: Pour the batter into the prepared springform pan.
- Bake: Bake in the preheated oven for 50-60 minutes, or until the top is a deep golden brown and the center is still slightly jiggly when you shake the pan. The cheesecake will puff up in the oven and then sink slightly as it cools.
- Cool: Remove the cheesecake from the oven and let it cool in the pan to room temperature. Once cool, remove the springform pan and peel away the parchment paper.
- Chill (Optional): For a firmer texture, you can refrigerate the cheesecake for a few hours or overnight. However, it can also be enjoyed at room temperature for a creamier texture.
- Serve: Slice and serve. This cheesecake is rich and delicious on its own but can also be paired with fresh berries or a drizzle of honey if desired.
