Blueberry Lemon Yogurt Cake

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plain Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)
  • 1 tablespoon all-purpose flour (for coating blueberries)

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.

2. Prepare the Dry Ingredients:

  • In a medium bowl, whisk together the 1 1/2 cups of flour, baking powder, and salt. Set aside.

3. Mix the Wet Ingredients:

  • In a large mixing bowl, whisk together the Greek yogurt, granulated sugar, eggs, vegetable oil, vanilla extract, lemon zest, and lemon juice until well combined.

4. Combine the Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them. This helps prevent them from sinking to the bottom of the cake.
  • Gently fold the blueberries into the batter.

5. Bake the Cake:

  • Pour the batter into the prepared loaf pan and spread it out evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
