Blueberry Lemon Yogurt Cake
Ingredients:
For the Cake:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
2. Prepare the Dry Ingredients:
- In a medium bowl, whisk together the 1 1/2 cups of flour, baking powder, and salt. Set aside.
3. Mix the Wet Ingredients:
- In a large mixing bowl, whisk together the Greek yogurt, granulated sugar, eggs, vegetable oil, vanilla extract, lemon zest, and lemon juice until well combined.
