Brown Butter Oatmeal Chocolate Chip Cookies

Ingredients:

For the Brown Butter:

  • 1 cup (2 sticks) unsalted butter

For the Cookies:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups chocolate chips (semi-sweet or milk chocolate)
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)

Instructions:

1. Brown the Butter:

  • In a medium saucepan, melt the butter over medium heat.
  • Continue to cook, swirling the pan occasionally, until the butter foams and then turns a rich amber color, with a nutty aroma (about 5-7 minutes).
  • Remove from heat and let it cool slightly.

2. Prepare the Dough:

  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  • In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar. Beat until well mixed.
  • Add the eggs and vanilla extract to the sugar mixture, and beat until smooth.
  • Gradually add the flour mixture, mixing until just combined.
  • Stir in the oats, chocolate chips, and nuts (if using).

3. Chill the Dough:

  • Cover the dough and chill in the refrigerator for at least 30 minutes, or up to overnight. This helps the flavors meld and prevents spreading during baking.

4. Bake the Cookies:

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Scoop the dough onto the prepared baking sheets, about 2 tablespoons per cookie, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown but the centers are still slightly soft.
  • Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

5. Serve and Enjoy:

  • Enjoy your Brown Butter Oatmeal Chocolate Chip Cookies with a glass of milk or your favorite beverage!

These cookies have a rich, nutty flavor from the browned butter and a delightful chewiness from the oats, with plenty of chocolatey goodness in every bite.
