Chocolate Mousse
Ingredients:
For the Chocolate Mousse:
- 7 oz (200g) semisweet or dark chocolate, chopped
- 3 tablespoons unsalted butter, cubed
- 3 large eggs, separated
- 1/4 cup granulated sugar, divided
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
1. Melt the Chocolate:
- Place the chopped chocolate and cubed butter in a heatproof bowl set over a pot of simmering water (double boiler method). Stir until melted and smooth.
- Remove the bowl from the heat and let it cool slightly.
2. Prepare the Egg Yolks:
- In a medium bowl, whisk the egg yolks with 2 tablespoons of granulated sugar until pale and thick.
3. Combine Chocolate and Egg Yolks:
- Gradually whisk the melted chocolate mixture into the egg yolk mixture until well combined. Set aside to cool.
4. Beat the Egg Whites:
- In a clean mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites until soft peaks form.
- Gradually add the remaining 2 tablespoons of granulated sugar and continue beating until stiff peaks form.
5. Whip the Cream:
- In another bowl, beat the heavy cream and vanilla extract until stiff peaks form.
6. Fold Ingredients Together:
- Gently fold the whipped cream into the chocolate mixture until well combined.
- Carefully fold the beaten egg whites into the chocolate mixture in three additions, making sure to retain as much air as possible for a light and airy mousse.
7. Chill the Mousse:
- Spoon the mousse into individual serving dishes or glasses.
- Cover and refrigerate for at least 2 hours, or until set.
8. Serve:
- Optionally, garnish with whipped cream, chocolate shavings, or fresh berries before serving.
