Chocolate Muffins
Ingredients:
For the Muffins:
- 1 3/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk, room temperature
- 1/2 cup vegetable oil
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (plus extra for sprinkling on top)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or grease the cups with cooking spray.
2. Mix the Dry Ingredients:
- In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix well.
3. Mix the Wet Ingredients:
- In a medium bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
4. Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy.
5. Add Chocolate Chips:
- Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
6. Fill the Muffin Tin:
- Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle a few extra chocolate chips on top of each muffin.
7. Bake:
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.
8. Cool:
- Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
9. Serve:
- Enjoy your chocolate muffins warm or at room temperature. They are perfect for breakfast, a snack, or dessert!
