Chocolate Peanut Butter Bars

Ingredients:

For the Base Layer:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups graham cracker crumbs (about 14-16 whole graham crackers)
  • 2 cups powdered sugar
  • 1 cup creamy peanut butter

For the Chocolate Topping:

  • 1 1/2 cups semisweet chocolate chips
  • 1/4 cup creamy peanut butter

Instructions:

1. Prepare the Pan:

  • Line a 9×13-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

2. Make the Base Layer:

  • In a medium bowl, combine the melted butter, graham cracker crumbs, powdered sugar, and 1 cup of creamy peanut butter.
  • Stir until well combined and the mixture is smooth.
  • Press the mixture evenly into the prepared baking dish, creating a smooth and even layer.

3. Make the Chocolate Topping:

  • In a microwave-safe bowl, combine the chocolate chips and 1/4 cup of creamy peanut butter.
  • Microwave in 30-second increments, stirring after each, until the chocolate and peanut butter are fully melted and smooth.
  • Alternatively, you can melt the chocolate and peanut butter together in a double boiler on the stovetop.

4. Assemble the Bars:

  • Pour the melted chocolate and peanut butter mixture over the base layer in the baking dish.
  • Spread it out evenly with a spatula or the back of a spoon to cover the base layer completely.

5. Chill and Set:

  • Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm and set.

6. Slice and Serve:

  • Once the bars are set, use the parchment paper overhang to lift them out of the baking dish.
  • Place the bars on a cutting board and use a sharp knife to slice them into squares or rectangles.
  • Serve chilled or at room temperature.

7. Store:

  • Store any leftover bars in an airtight container in the refrigerator for up to a week.
