Chocolate Peanut Butter Bars
Ingredients:
For the Base Layer:
- 1 cup (2 sticks) unsalted butter, melted
- 2 cups graham cracker crumbs (about 14-16 whole graham crackers)
- 2 cups powdered sugar
- 1 cup creamy peanut butter
For the Chocolate Topping:
- 1 1/2 cups semisweet chocolate chips
- 1/4 cup creamy peanut butter
Instructions:
1. Prepare the Pan:
- Line a 9×13-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
2. Make the Base Layer:
- In a medium bowl, combine the melted butter, graham cracker crumbs, powdered sugar, and 1 cup of creamy peanut butter.
- Stir until well combined and the mixture is smooth.
- Press the mixture evenly into the prepared baking dish, creating a smooth and even layer.
3. Make the Chocolate Topping:
- In a microwave-safe bowl, combine the chocolate chips and 1/4 cup of creamy peanut butter.
- Microwave in 30-second increments, stirring after each, until the chocolate and peanut butter are fully melted and smooth.
- Alternatively, you can melt the chocolate and peanut butter together in a double boiler on the stovetop.
4. Assemble the Bars:
- Pour the melted chocolate and peanut butter mixture over the base layer in the baking dish.
- Spread it out evenly with a spatula or the back of a spoon to cover the base layer completely.
5. Chill and Set:
- Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm and set.
6. Slice and Serve:
- Once the bars are set, use the parchment paper overhang to lift them out of the baking dish.
- Place the bars on a cutting board and use a sharp knife to slice them into squares or rectangles.
- Serve chilled or at room temperature.
7. Store:
- Store any leftover bars in an airtight container in the refrigerator for up to a week.
