Chocolate Zucchini Bread

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 3/4 cup semi-sweet chocolate chips (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon. Set aside.

3. Prepare Wet Ingredients:

  • In a large bowl, beat the eggs until light and frothy.
  • Add the vegetable oil, granulated sugar, brown sugar, and vanilla extract, and mix until well combined.

4. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Fold in the grated zucchini, making sure it is evenly distributed throughout the batter.
  • If using, gently fold in the chocolate chips and chopped nuts.

5. Bake the Bread:

  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

6. Cool and Serve:

  • Allow the bread to cool in the pan for about 10 minutes.
  • Transfer it to a wire rack to cool completely before slicing and serving.
