Cinnamon Apple Bread Recipe

Ingredients

For the Bread:

  • 2 cups (250g) all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 2 cups (about 2 medium) peeled and finely chopped apples (use a variety like Granny Smith, Honeycrisp, or Fuji)

For the Cinnamon Sugar Swirl:

  • 1/3 cup (65g) granulated sugar
  • 1 teaspoon ground cinnamon

For the Topping:

  • 2 tablespoons (30g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Prepare Cinnamon Sugar Swirl: In a small bowl, mix together 1/3 cup granulated sugar and 1 teaspoon ground cinnamon. Set aside.
  3. Prepare the Batter:
    1. In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
    2. In a large mixing bowl, beat the butter and 1 cup of granulated sugar together until light and fluffy.
    3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    4. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix just until combined.
    5. Fold in the chopped apples.
  4. Layer the Batter:
    1. Spread half of the batter into the prepared loaf pan.
    2. Sprinkle half of the cinnamon sugar mixture evenly over the batter.
    3. Spread the remaining batter over the cinnamon sugar layer.
    4. Sprinkle the remaining cinnamon sugar mixture evenly over the top of the batter.
  5. Bake the Bread: Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If the bread starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
  6. Add the Topping:
    1. When the bread is done baking, remove it from the oven and let it cool in the pan for about 10 minutes.
    2. In a small bowl, mix together 2 tablespoons granulated sugar and 1/2 teaspoon ground cinnamon.
    3. Brush the top of the bread with the melted butter, then sprinkle the cinnamon sugar mixture evenly over the top.
  7. Cool and Serve: Let the bread cool completely on a wire rack before slicing and serving. This helps the flavors to meld and makes slicing easier.
