Coffee bean cookies recipe
1/3 cup softened butter
2/3 cup powdered sugar
1 egg yolk
1 shot espresso
1 cup flour
2 tablespoons cornstrach
2 tablespoons cocoa powder
1. Mix the soft butter with the powdered sugar very well until it becomes creamy.
2. Add the egg yolk and incorporate it well.
3. Pour the shot of espresso and mix it into the composition.
4. Sift the flour, cornstarch and cocoa. Incorporate the ingredients well until you get a soft dough.
5. Leave the dough in the refrigerator for 30 minutes.
6. Form dough balls, giving them an oval shape, similar to coffee beans. Place them in a tray lined with baking paper. With a toothpick or a knife, make a cut, not very deep, in the middle of each cookie.
7. Put the tray in the fridge for 30 minutes.
8. Then bake the cookies in the preheated oven at 340 F for 12 minutes.
9. Let them cool completely before serving.
