Pavlova

Ingredients:

For the Meringue:

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh fruits (such as strawberries, kiwi, passion fruit, blueberries, raspberries, etc.)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 300°F (150°C).
  • Line a baking sheet with parchment paper. Draw a 9-inch circle on the parchment paper as a guide, then flip the paper over so the pencil or pen marks don’t touch the meringue.

2. Make the Meringue:

  • In a large clean bowl, beat the egg whites and a pinch of salt with an electric mixer on medium speed until soft peaks form.
  • Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the egg whites. Increase the speed to high and beat until stiff, glossy peaks form and the sugar is fully dissolved (you can test by rubbing a bit of the meringue between your fingers; it should feel smooth).
  • Add the white vinegar, cornstarch, and vanilla extract to the meringue. Gently fold in with a spatula until just combined.

3. Shape the Meringue:

  • Spoon the meringue onto the prepared baking sheet, using the circle as a guide. Spread it into an even layer, creating a slight indentation in the center to hold the toppings later.

4. Bake the Meringue:

  • Place the meringue in the preheated oven and immediately reduce the oven temperature to 250°F (120°C).
  • Bake for 1 hour and 15 minutes, or until the meringue is crisp and dry on the outside but still has a slightly soft center.
  • Turn off the oven and leave the meringue inside to cool completely with the oven door slightly ajar. This helps prevent cracking.

5. Prepare the Whipped Cream:

  • In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until soft peaks form.

6. Assemble the Pavlova:

  • Once the meringue is completely cool, carefully transfer it to a serving plate.
  • Spoon the whipped cream into the center of the meringue.
  • Top with fresh fruits of your choice.

7. Serve:

  • Serve the Pavlova immediately after assembling to maintain its crisp texture. Enjoy!
