Easy Chocolate Fudge Cake
Ingredients:
For the Cake:
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups granulated sugar
- 2 large eggs, room temperature
- 1 cup whole milk, room temperature
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Chocolate Fudge Frosting:
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1 cup unsweetened cocoa powder
- 1/2 cup whole milk
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper for easy removal.
2. Make the Cake Batter:
- In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Add the granulated sugar and whisk to combine.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
- Gradually add the boiling water to the batter, mixing on low speed until smooth. The batter will be thin, but that’s okay.
3. Bake the Cakes:
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
4. Make the Chocolate Fudge Frosting:
- In a large bowl, beat the softened butter until creamy and smooth.
- Sift together the powdered sugar and cocoa powder to remove any lumps.
- Gradually add the powdered sugar and cocoa mixture to the butter, beating on low speed until combined.
- Add the milk, vanilla extract, and salt, and beat on medium-high speed until the frosting is light and fluffy. Add more milk if necessary to reach the desired consistency.
5. Assemble the Cake:
- Place one cake layer on a serving plate or cake stand.
- Spread a generous amount of chocolate fudge frosting over the top of the first layer.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
- For a smooth finish, dip an offset spatula in hot water, wipe it dry, and use it to smooth the frosting.
6. Serve:
- Slice and serve the cake at room temperature.
- Store any leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
