Easy Lemon Coconut Almond Cake Recipe

Ingredients:

For the Cake:
  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, all-purpose flour, shredded coconut, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add Wet Ingredients: Add the eggs one at a time, beating well after each addition. Mix in the Greek yogurt, lemon juice, lemon zest, and vanilla extract until combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Bake the Cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Cool the Cake: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
For the Lemon Glaze:
  1. Prepare the Glaze: In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest (if using) until smooth. Adjust the consistency of the glaze by adding more powdered sugar (for a thicker glaze) or more lemon juice (for a thinner glaze) as needed.
  2. Glaze the Cake: Once the cake is completely cool, drizzle the lemon glaze over the top, allowing it to drip down the sides.
  3. Serve: Slice and serve your easy lemon coconut almond cake. Enjoy!

This cake is perfect for any occasion with its refreshing lemon flavor and delightful coconut and almond combination.
