Glazed Lemon Loaf Recipe
Ingredients:
For the Lemon Loaf:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup granulated sugar
- 2 tbsp lemon zest (about 2 lemons)
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/2 cup milk
- 1/4 cup freshly squeezed lemon juice
For the Lemon Glaze:
- 1 cup powdered sugar
- 2-3 tbsp freshly squeezed lemon juice
- 1 tsp lemon zest (optional, for extra zing)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8×4 inch loaf pan or line it with parchment paper.
- Prepare the Lemon Loaf Batter:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, combine the granulated sugar and lemon zest. Rub them together with your fingers until the sugar is fragrant and slightly yellow.
- Add the softened butter to the lemon-sugar mixture and beat with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then add the vanilla extract.
- In a small bowl, combine the milk and lemon juice. (The mixture may curdle slightly, which is normal.)
- Gradually add the dry ingredients to the butter mixture, alternating with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Bake the Lemon Loaf:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare the Lemon Glaze:
- In a small bowl, whisk together the powdered sugar and lemon juice until smooth. If desired, add the lemon zest for extra flavor.
- Adjust the consistency of the glaze by adding more powdered sugar (for a thicker glaze) or more lemon juice (for a thinner glaze) as needed.
- Glaze the Lemon Loaf:
- Once the loaf is completely cool, drizzle the lemon glaze over the top, allowing it to drip down the sides.
- Let the glaze set for a few minutes before slicing and serving.
