Ground Pork Tacos with Pineapple Salsa Recipe
Ingredients:
For the Ground Pork:
- 1 lb (450 g) ground pork
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup (60 ml) tomato sauce
- 1 tablespoon lime juice
For the Pineapple Salsa:
- 1 cup fresh pineapple, diced
- 1/2 small red onion, finely chopped
- 1 small red bell pepper, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
For Serving:
- 8 small corn or flour tortillas, warmed
- 1 avocado, sliced
- Fresh cilantro leaves
- Lime wedges
Instructions:
Prepare the Pineapple Salsa:
- In a medium bowl, combine the diced pineapple, red onion, red bell pepper, cilantro, jalapeño, lime juice, and salt.
- Toss well to combine. Set aside to let the flavors meld while you prepare the pork.
Cook the Ground Pork:
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the ground pork, breaking it up with a spoon, and cook until browned and fully cooked through, about 7-8 minutes.
- Drain any excess fat from the skillet.
- Stir in the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for another 1-2 minutes.
- Add the tomato sauce and lime juice, stirring to combine. Cook for an additional 2-3 minutes until the mixture is heated through and well combined.
Assemble the Tacos:
- Place a generous spoonful of the ground pork mixture onto each warmed tortilla.
- Top with a spoonful of pineapple salsa.
- Add avocado slices and garnish with fresh cilantro leaves.
- Serve with lime wedges on the side for squeezing over the tacos.
Tips:
- For extra flavor, you can char the tortillas over a gas flame or in a hot, dry skillet before serving.
- Feel free to add other toppings like shredded lettuce, cheese, or sour cream if desired.
