Here’s a simple and hearty recipe for Hamburger and Potato Casserole, perfect for a family dinner!

Ingredients:

  • 1 lb ground beef
  • 4-5 medium potatoes, peeled and thinly sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken soup)
  • 1 cup milk
  • 1½ cups shredded cheddar cheese (divided)
  • 1 tsp dried thyme (optional)
  • Salt and pepper, to taste
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook the ground beef:
    • In a large skillet, heat a little oil over medium-high heat.
    • Add the ground beef and cook until browned, breaking it up as it cooks.
    • Drain excess fat, then add the chopped onion and minced garlic. Sauté until the onion is softened (about 3-4 minutes).
    • Season the beef mixture with salt, pepper, and thyme (if using), and set aside.
  3. Prepare the potatoes:
    • Peel and slice the potatoes thinly (about ⅛ inch thick), using a mandoline or knife.
  4. Make the sauce:
    • In a small bowl, mix together the condensed cream of mushroom soup and milk until smooth.
    • Season with a little salt and pepper if needed.
  5. Assemble the casserole:
    • Grease a 9×13-inch baking dish with butter or nonstick spray.
    • Layer half of the sliced potatoes on the bottom of the dish.
    • Spread half of the cooked ground beef mixture over the potatoes.
    • Pour half of the soup mixture on top, followed by half of the shredded cheddar cheese.
    • Repeat with another layer of potatoes, beef, soup mixture, and cheese.
  6. Bake the casserole:
    • Cover the dish with aluminum foil and bake in the preheated oven for 1 hour.
    • After 1 hour, remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and the potatoes are tender.
  7. Serve:
    • Let the casserole sit for 5-10 minutes before serving to allow it to set.
    • Garnish with fresh parsley, if desired, and serve warm.
