Honey Cake Recipe

Ingredients

For the Cake:

  • 3 1/2 cups (440g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) vegetable oil
  • 1 cup (340g) honey
  • 1 cup (240ml) strong brewed coffee, cooled
  • 1/2 cup (120ml) orange juice
  • 1 teaspoon vanilla extract
  • Zest of 1 orange (optional)

For the Glaze (optional):

  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons milk or orange juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch (25cm) bundt pan or a 9×13-inch (23x33cm) baking pan.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
  3. Mix Wet Ingredients: In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy. Gradually add the vegetable oil, honey, coffee, orange juice, and vanilla extract. Mix until well combined.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If using, fold in the orange zest.
  5. Pour Batter into Pan: Pour the batter into the prepared pan, spreading it evenly.
  6. Bake the Cake: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If using a 9×13-inch pan, check for doneness at around 35-40 minutes. If the cake starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
  7. Cool the Cake: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Prepare the Glaze (optional): In a small bowl, whisk together the powdered sugar, milk or orange juice, and vanilla extract until smooth. Adjust the consistency by adding more milk or orange juice if needed.
  9. Glaze the Cake (optional): Once the cake is completely cooled, drizzle the glaze over the top. Let the glaze set for a few minutes before serving.
