Mini No-Bake Nutella Cheesecakes

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (about 10-12 graham crackers)
  • 1/4 cup unsalted butter, melted

For the Cheesecake Filling:

  • 8 ounces cream cheese, softened
  • 1 cup Nutella
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

For the Topping:

  • 1/2 cup Nutella (for drizzling)
  • Whipped cream (optional)
  • Chopped hazelnuts (optional)
  • Chocolate shavings (optional)

Instructions:

1. Prepare the Crust:

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated and the mixture resembles wet sand.
  • Divide the mixture evenly among 12 cupcake liners placed in a muffin tin, pressing it firmly into the bottom to form a crust.
  • Place the muffin tin in the refrigerator to set while you prepare the filling.

2. Prepare the Cheesecake Filling:

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add the Nutella and vanilla extract, and beat until fully combined and smooth.
  • In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  • Gently fold the whipped cream into the Nutella mixture until well incorporated, being careful not to deflate the whipped cream.

3. Assemble the Cheesecakes:

  • Spoon or pipe the Nutella cheesecake filling over the prepared crusts in the cupcake liners, filling each liner to the top.
  • Smooth the tops with a spatula or the back of a spoon.

4. Chill:

  • Refrigerate the mini cheesecakes for at least 3 hours, or until they are firm and set.

5. Serve:

  • Before serving, drizzle each mini cheesecake with additional Nutella. You can do this by microwaving the Nutella for a few seconds to make it easier to drizzle.
  • Top with a dollop of whipped cream, and garnish with chopped hazelnuts or chocolate shavings, if desired.

6. Enjoy:

  • Carefully remove the mini cheesecakes from the muffin tin and serve chilled.
