S’mores French Toast Recipe

Ingredients

For the French Toast:

  • 4 large eggs
  • 1 cup milk (whole, almond, or any preferred type)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 8 slices of thick bread (brioche or challah work well)
  • Butter or oil for frying

For the S’mores Filling:

  • 1/2 cup marshmallow fluff
  • 1/2 cup chocolate spread (such as Nutella) or melted chocolate
  • 4 graham crackers, crushed

For the Topping:

  • 1/4 cup mini marshmallows
  • 1/4 cup chocolate chips or chocolate sauce
  • 2 graham crackers, crushed
  • Powdered sugar (optional)

Instructions

  1. Prepare the Filling:
    • In a small bowl, stir the chocolate spread until smooth. If using melted chocolate, ensure it is smooth and slightly cooled.
    • Crush the graham crackers into small pieces.
  2. Make the French Toast Batter:
    • In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and salt until well combined.
  3. Assemble the French Toast:
    • Take one slice of bread and spread a generous layer of marshmallow fluff on one side. On another slice, spread a layer of chocolate spread or melted chocolate.
    • Sprinkle crushed graham crackers over the chocolate spread. Sandwich the two slices together to create a stuffed French toast. Repeat with the remaining bread and fillings.
  4. Dip the Sandwiches:
    • Heat a non-stick skillet or griddle over medium heat and add a tablespoon of butter or oil.
    • Dip each sandwich into the egg mixture, ensuring both sides are well coated but not overly soaked.
  5. Cook the French Toast:
    • Place the dipped sandwiches onto the preheated skillet. Cook for 2-3 minutes on each side, or until golden brown and the filling is melted. Add more butter or oil to the pan as needed.
  6. Prepare the Toppings:
    • While the French toast is cooking, lightly toast the mini marshmallows in a skillet or under a broiler until they are golden brown. Alternatively, you can leave them untoasted for a softer texture.
  7. Assemble and Serve:
    • Once the French toast is cooked, place it on a serving plate. Top with a handful of toasted mini marshmallows, a sprinkle of chocolate chips or a drizzle of chocolate sauce, and additional crushed graham crackers.
    • Optionally, dust with powdered sugar for a touch of sweetness.
