- 1 cup granulated sugar
- 1 cup fresh strawberries, pureed
- 1/2 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1 cup coarsely chopped Oreo cookies
For the Strawberry Sauce
- 1 1/2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tsp lemon juice
- 1 tbsp water
- 1 tsp cornstarch
For Decoration (optional)
- Whipped cream
- Oreo cookie halves
- Fresh strawberries
Instructions
1. Prepare the Oreo Crust
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Make the Crust: In a food processor, pulse the Oreo cookies until they are fine crumbs. Combine the crumbs with melted butter and mix until well combined.
- Form the Crust: Press the mixture firmly into the bottom of the prepared springform pan. Use the bottom of a glass or measuring cup to pack the crumbs tightly.
- Bake: Bake the crust for 8-10 minutes. Remove from the oven and let it cool while you prepare the filling.
2. Make the Strawberry Cheesecake Filling
- Cream Cheese Mixture: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the sugar and beat until combined.
- Add Ingredients: Add the pureed strawberries, sour cream, and vanilla extract. Mix until smooth. Then add the eggs, one at a time, mixing on low speed until just combined. Be careful not to overmix.
- Thicken: Add the flour and mix until incorporated.
- Fold in Oreos: Gently fold in the chopped Oreo cookies.
- Bake: Pour the cheesecake batter over the cooled crust. Tap the pan gently on the counter to remove any air bubbles. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until the center is almost set but still slightly jiggly.
- Cool: Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour. Then remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
3. Prepare the Strawberry Sauce
- Cook Strawberries: In a small saucepan, combine the sliced strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries release their juices and the mixture starts to simmer.
- Thicken: In a small bowl, mix the water and cornstarch until smooth. Add the cornstarch mixture to the strawberries and stir well. Cook for another 2-3 minutes, until the sauce thickens slightly. Remove from heat and let it cool completely.
4. Assemble and Decorate
- Top the Cheesecake: Once the cheesecake is completely chilled, remove it from the springform pan and transfer it to a serving plate. Pour the cooled strawberry sauce over the top.
- Decorate: Optionally, decorate with whipped cream, Oreo cookie halves, and fresh strawberries.
5. Serve
- Slice and Serve: Slice the cheesecake with a clean, sharp knife, wiping the knife between each cut for clean slices. Serve chilled and enjoy the delightful combination of strawberries and Oreos in a creamy cheesecake!
