Strawberry Tres Leches Cake
Ingredients
For the Cake:
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 5 large eggs, separated
- 1 cup granulated sugar, divided
- 1/3 cup whole milk
- 1 tsp vanilla extract
For the Milk Mixture:
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup whole milk
- 1/2 cup strawberry puree (from fresh or frozen strawberries)
For the Whipped Topping:
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
For the Strawberry Topping:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
Instructions
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking dish.
2. Make the Cake Batter:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the egg yolks with 3/4 cup of the sugar until pale yellow and doubled in volume. Stir in the milk and vanilla extract.
- Gently fold the flour mixture into the egg yolk mixture until just combined.
- In a separate bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
- Gently fold the egg whites into the batter in batches until just combined.
3. Bake the Cake:
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 30 minutes.
4. Prepare the Milk Mixture:
- In a large measuring cup or bowl, whisk together the evaporated milk, sweetened condensed milk, whole milk, and strawberry puree.
5. Soak the Cake:
- Once the cake is cool, poke holes all over the top with a fork.
- Slowly pour the milk mixture over the cake, allowing it to soak in. Cover and refrigerate for at least 4 hours, or overnight for best results.
6. Make the Whipped Topping:
- In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.
7. Prepare the Strawberry Topping:
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Let sit for about 15 minutes to macerate.
8. Assemble the Cake:
- Spread the whipped topping evenly over the soaked cake.
- Spoon the macerated strawberries and their juices over the whipped topping.
9. Serve:
