  • 5 large eggs, separated
  • 1 cup granulated sugar, divided
  • 1/3 cup whole milk
  • 1 tsp vanilla extract

For the Milk Mixture:

  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup whole milk
  • 1/2 cup strawberry puree (from fresh or frozen strawberries)

For the Whipped Topping:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13-inch baking dish.

2. Make the Cake Batter:

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the egg yolks with 3/4 cup of the sugar until pale yellow and doubled in volume. Stir in the milk and vanilla extract.
  • Gently fold the flour mixture into the egg yolk mixture until just combined.
  • In a separate bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
  • Gently fold the egg whites into the batter in batches until just combined.

3. Bake the Cake:

  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 30 minutes.

4. Prepare the Milk Mixture:

  • In a large measuring cup or bowl, whisk together the evaporated milk, sweetened condensed milk, whole milk, and strawberry puree.

5. Soak the Cake:

  • Once the cake is cool, poke holes all over the top with a fork.
  • Slowly pour the milk mixture over the cake, allowing it to soak in. Cover and refrigerate for at least 4 hours, or overnight for best results.

6. Make the Whipped Topping:

  • In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.

7. Prepare the Strawberry Topping:

  • In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Let sit for about 15 minutes to macerate.

8. Assemble the Cake:

  • Spread the whipped topping evenly over the soaked cake.
  • Spoon the macerated strawberries and their juices over the whipped topping.

9. Serve:

  • Cut the cake into squares and serve chilled. Enjoy the delightful flavors of this Strawberry Tres Leches Cake
