- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped (optional)
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
Prepare the Chicken:
- Butterfly the Chicken:
- Slice each chicken breast in half horizontally to create four thin cutlets. Season both sides with salt and black pepper.
- Set Up Breading Stations:
- Place the flour in a shallow dish.
- Place the beaten eggs in another shallow dish.
- In a third shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, and dried basil.
- Bread the Chicken:
- Dredge each chicken cutlet in the flour, shaking off any excess.
- Dip the floured cutlet into the beaten eggs, allowing any excess to drip off.
- Press the cutlet into the breadcrumb mixture, ensuring it is fully coated. Repeat with all cutlets.
- Cook the Chicken:
- Heat the vegetable oil in a large skillet over medium-high heat.
- Fry the breaded chicken cutlets for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove and drain on paper towels.

- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Rolls:
- Place the split sub rolls on a baking sheet.
- Layer the Ingredients:
- Spread a generous amount of marinara sauce on the bottom half of each roll.
- Place a fried chicken cutlet on top of the marinara sauce.
- Spoon additional marinara sauce over each chicken cutlet.
- Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the sauce-covered chicken.
- Bake the Sandwiches:
- Place the baking sheet in the preheated oven.
- Bake for about 10 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove the sandwiches from the oven.
- Sprinkle with chopped fresh basil and parsley if desired.
- Close the sandwiches with the top half of the rolls.
- Serve hot.
Tips:
- For a crispier sandwich, you can toast the sub rolls in the oven before assembling.
- If you prefer, you can use a mixture of mozzarella and provolone cheese for added flavor.
- Serve with a side of extra marinara sauce for dipping and a green salad for a complete meal.
