Croiffles (Croissant Waffles) Recipe
Ingredients:
For the Croissant Dough:
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1/4 cup warm water (110°F / 45°C)
- 2 tablespoons sugar
- 3 3/4 cups all-purpose flour
- 1 1/4 teaspoons salt
- 1 cup cold unsalted butter, cut into small cubes
- 3/4 cup cold milk
- 1 large egg
For the Waffles:
- Non-stick cooking spray or additional melted butter (for the waffle iron)
Instructions:
Prepare the Croissant Dough:
- Activate the Yeast:
- In a small bowl, dissolve the yeast and a pinch of sugar in the warm water. Let it sit for about 5-10 minutes until it becomes frothy.
- Mix Dry Ingredients:
- In a large mixing bowl, whisk together the flour, remaining sugar, and salt.
- Cut in the Butter:
- Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
- Combine Wet Ingredients:
- In another bowl, whisk together the cold milk and egg. Add the frothy yeast mixture and stir to combine.
- Form the Dough:
- Pour the wet ingredients into the dry ingredients. Stir until the dough comes together. It will be sticky.
- Chill the Dough:
- Turn the dough out onto a lightly floured surface and knead it a few times to bring it together into a ball. Wrap it in plastic wrap and refrigerate for at least 1 hour.
- Roll and Fold (Laminate) the Dough:
- On a lightly floured surface, roll the chilled dough into a rectangle about 1/2 inch thick.
- Fold the dough into thirds like a letter. Turn it 90 degrees, roll it out again, and fold into thirds.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes. Repeat the rolling and folding process two more times, chilling the dough for 30 minutes in between each fold.
- Final Roll:
- After the final chill, roll the dough out to a thickness of about 1/4 inch.
Make the Croiffles:
- Preheat the Waffle Iron:
- Preheat your waffle iron according to the manufacturer’s instructions. Lightly spray with non-stick cooking spray or brush with melted butter.
- Cut and Cook:
- Cut the croissant dough into squares or triangles that will fit into your waffle iron.
- Place a piece of dough in the preheated waffle iron and cook until golden brown and crisp, about 3-5 minutes, depending on your waffle iron.
- Serve:
- Remove the croiffle from the waffle iron and let it cool slightly on a wire rack.
- Repeat with the remaining dough.
