Tiramisu

Ingredients:

For the Filling:

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese, softened
  • 1 1/2 cups heavy cream, cold

For the Coffee Mixture:

  • 1 1/2 cups strong brewed espresso or very strong coffee, cooled
  • 1/4 cup coffee liqueur (such as Kahlúa), optional

For the Assembly:

  • 1 package (about 7 ounces) ladyfingers (savoiardi)
  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings or curls, for garnish (optional)

Instructions:

1. Prepare the Filling:

  • In a large heatproof bowl, whisk together the egg yolks and granulated sugar until well combined.
  • Place the bowl over a pot of simmering water (double boiler method) and whisk continuously for about 10 minutes, until the mixture is thick and pale in color. Be careful not to let the bowl touch the water.
  • Remove from heat and let it cool slightly.
  • Add the mascarpone cheese to the egg yolk mixture and beat until smooth and well combined.

2. Whip the Cream:

  • In a separate bowl, whip the heavy cream until stiff peaks form.

3. Combine the Mixtures:

  • Gently fold the whipped cream into the mascarpone mixture until fully incorporated and smooth. Be careful not to deflate the cream.

4. Prepare the Coffee Mixture:

  • In a shallow dish, combine the cooled espresso and coffee liqueur (if using).

5. Assemble the Tiramisu:

  • Quickly dip each ladyfinger into the coffee mixture, making sure they are moist but not soggy. Lay them in a single layer in a 9×13 inch dish or a similarly sized serving dish.
  • Spread half of the mascarpone filling over the layer of ladyfingers.
  • Repeat with another layer of dipped ladyfingers and the remaining mascarpone filling.

6. Chill the Tiramisu:

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.

7. Serve:

  • Just before serving, dust the top generously with unsweetened cocoa powder.
  • Optionally, garnish with dark chocolate shavings or curls.

8. Enjoy:
