Whole Orange Cake
Ingredients:
For the Cake:
- 2 medium oranges (seedless, preferably organic)
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 cup vegetable oil (or melted butter)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Orange Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons fresh orange juice
- 1 teaspoon orange zest (optional)
Instructions:
1. Prepare the Oranges:
- Preheat your oven to 350°F (175°C).
- Grease and flour an 8-inch or 9-inch round cake pan, or line it with parchment paper.
- Wash the oranges thoroughly. Cut them into quarters (including the peel), remove any seeds, and place the quarters into a food processor or blender.
- Blend until you have a smooth puree.
2. Make the Cake Batter:
- In a large mixing bowl, combine the sugar and eggs. Beat with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
- Gradually add the vegetable oil (or melted butter) and continue to beat until well combined.
- Add the orange puree to the egg mixture and mix until combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
3. Bake the Cake:
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
4. Prepare the Orange Glaze:
- In a small bowl, whisk together the powdered sugar and fresh orange juice until smooth. If you want a thicker glaze, use less orange juice; for a thinner glaze, use more.
- Stir in the orange zest if using.
5. Glaze the Cake:
- Once the cake is completely cooled, place it on a serving plate.
- Pour the orange glaze over the top of the cake, allowing it to drizzle down the sides.
6. Serve:
