Yogurt and fruits dessert recipe
Ingredients for the cake base :
4 oz (100 g) LadyFingers
1/2 cups (100 ml) milk (you can also use natural fruit syrup)
Ingredients for fruit yogurt cream:
10 oz (300 g) Greek yogurt (with 10% fat)
1/3 cup (70 g) powdered sugar
1 cup (230 g) mascarpone
1 tbsp (15 g) gelatine
1/4 (50 ml) cup water
10 oz (300g) fruits (raspberries, strawberries, blueberries)
1 lemon essence
Step 1: Add gelatin in a bowl and pour 50ml of water on top.
Step 2: Mix and leave the gelatin to hydrate for 5 minutes.
Step 3: After the gelatin has hydrated, add hot milk 1/2 cups (100ml) and mix very well to dissolve the gelatin.
Step 4: In a deeper bowl put the yogurt and powdered sugar.
Step 5: Mix well with a whisk.
Step 6: Add dissolved gelatin and lemon essence and continue to mix.
Step 7: Put the mascarpone cream and incorporate it into the composition.
Step 8: In the yogurt mixture, put the fruits and incorporate them into the composition with a spatula using light movements so the fruits won’t get crushed.
Step 9: In a cake pan with removable walls (a silicone tray is recommended), pour the yogurt cream and fruits.
Step 10: Put each ladyfinger in milk (softly) and place the ladyfingers on top of the fruit yogurt cream.
Step 11: Refrigerate for 3-4 hours or overnight.
Step 12: Turn the cake over on a plate and garnish it with fruits according to your preferences.
